My cuisine is purely traditional and based on Apulian culture, ranging from humble dishes like bread and cheese meatballs to the typical roasted meats of Cisternino (bombette, knife-point sausages, gnumerelli, etc.). However, what adds the most charm to my cooking is the handmade fresh pasta made by my mother and grandmother, particularly burnt wheat orecchiette served with local fresh tomato sauce and cacioricotta cheese.
