Our house nestled in the hills of Assisi is surrounded by a large olive grove and a well-stocked vegetable garden, which my husband Angelo manages and cares for with dedication and love.Why is the title of this experience " What passes the Convent" ?Simple, we are not going to the supermarket to buy produce that will be used in our cooking class.With raffia baskets and knife we will take a leisurely walk and gather in our magnificent garden what nature gives us.We will return home loaded with delicacies and turn them into delicious dishes, clearly seasoned with our strictly natural olive oil and finally we will sit at our table tasting our dishes washed down with a good local wine.

Special cooking class: with a visit in the kitchen garden

As per tradition in my family and in all Umbre families on Christmas Day we eat Tortellini. The preparation of Tortellini is a convivial ritual, where the whole family gathers around the table , and where anecdotes are told and utensils handed down through generations are used. Absolutely tortellini are eaten in a good meat broth and the boiled meat is accompanied by tasty sauces. The Christmas atmosphere makes this moment more magical , especially if to welcome you there will be a bruschetta cooked on the fireplace and seasoned with our extra virgin olive oil produced from the olives of our olive grove that surrounds the house. You will return to your homes with the memory of Christmas in Assisi.

Let's prepare for Christmas lunch in the traditional way

Take a seat at the comfortable tables of the Cesarine to savor forgotten recipes that have been treasured and handed down for generations.During this cooking class in my home nestled in the hills of Assisi you will learn to prepare 3 typical recipes from my area: the typical "Strangozzi Umbri", gnocchi and ricotta and spinach ravioli.Putting your hands to pasta is a rewarding experience and then tasting what you have created is truly a wonderful emotion.Each participant will have his or her own station and will be actively working, equipped with a apron and a handout where the recipes will be explained, with ingredients and steps.We will open our tasting of the created pastries with an appetizer of local products, all washed down with an excellent local wine.
