I can’t wait to welcome you to my cookery school, in the heart of Assisi’s historic centre. Amidst the town’s charming streets, you’ll enjoy an authentic and exclusive culinary experience dedicated to Umbrian truffles. I’ll guide you through the different types of truffle, sharing interesting facts and secrets about this precious ingredient. Together we’ll prepare some traditional and gourmet recipes: fettuccine with truffles, truffle-stuffed eggs and one of my specialities, spinach au gratin with cheese and truffles.
The class will conclude with a brief tasting of the dishes we’ve prepared, because the aim of the experience is to learn the secrets, techniques and recipes so you can easily recreate them at home.

- Eleonora was amazing! My wife and I took the sauce cooking class. It was amazing to learn different authentic recipes (carbonara, Amatriciana, and norcina). It’s a great environment and we were with 4 other people. We got to eat them all and had a bottle of wine as well. Highly recommend!

I did so much we even purchased wine and olive oil to have sent home. Her grandson’s run the wine, cheese and olive oil store and they are absolutely adorable and knowledgeable.

It is a welcoming place where you learn by doing, through recipes, techniques, and traditions, in a friendly and convivial atmosphere. The experiences end with a short tasting of the dishes prepared together, because the main goal of the cooking school is to pass on techniques and tips so that each guest can easily recreate the recipes at home. I live and work surrounded by the beauty of Umbria and its produce, which follows the rhythm of the seasons. In my cooking school, I like to share Umbrian culinary traditions with my guests, enhancing local flavors and using fresh ingredients grown in nearby fields.
