I am delighted to invite you to discover the secrets of focaccia and Umbrian torta al testo at my cookery school in the heart of Assisi’s historic centre.
You will enjoy an authentic and convivial experience, where I will guide you step by step through the preparation of two traditional Umbrian specialities. We will begin with a welcome aperitif made with local produce, to introduce you to the authentic flavours of Umbria. I will teach you how to make homemade focaccia and the traditional torta al testo, an Umbrian speciality cooked on a stone griddle called a ‘testo’. At the end of the class, we will enjoy together what we have prepared, accompanied by local specialities and a glass of fine local wine, in an atmosphere of cheerfulness, conviviality and authentic Italian tradition.
