"Mi diletto da sempre a cucinare piatti tradizionali toscani e in particolare quelli butesi, perché tutte le ricette me le hanno passate mia mamma e mia nonna (che con mio nonno hanno avuto anche una pizzeria). Le mie ricette infatti sono racchiuse in un quaderno per me molto prezioso e,  tra i miei piatti preferiti ci sono i crostini alla butese come antipasto e i maccheroni al ragù e le tagliatelle all'uovo per i primi. Tra i secondi piatti le mie preferenze sono per i cavolini neri con maiale e gli zucchini ripieni. Per i dolci il tiramisù e il castagnaccio. Preferibilmente, mi piace cucinare i piatti di terra, antipasti, primi e secondi di carne e i dolci".

My family and I had a fantastic experience with Cosetta and Paolo. We were warmly welcomed into her home for a fabulous afternoon and evening. She taught us how to make a delicious pasta recipe and we shared a meal at her table, quickly feeling like friends! Cosetta takes her time to explain her approach to cooking the meal, was wonderful with our children - she engaged them and allowed them to cut, chop, knead, mix - whatever needed to be done. I highly recommend this wonderful experience. Paolo met us when we parked our car and walked the 2 minutes with us to the house. Buti is a charming Italian village to visit. This experience was a highlight of our time in Italy.

What a delightful afternoon - excellent food, great wine and a warm and welcoming ambience. Cosetta was a charming host and an excellent teacher, patient and expert in the preparation of ricotta gnocchi. We had lots of fun together but also learned a lot about Tuscan culinary traditions and practices. Highly recommended.
