Ciao da Novella!

Sono nata a Bologna ma le mie origini sono qui in Toscana, anche quelle culinarie.Della cucina lucchese amo preparare i tordelli al ragù e le diverse zuppe, dalla frantoiana alla ribollita, alla pappa al pomodoro, tutte condite con l'ottimo olio delle nostre colline.L'antipasto è sempre rustico,  con ottime bruschette di pane "sciocco" - ovvero senza sale - e lardo di Colonnata, fagioli Igp di Sorana, cavolo nero e gli immancabili fegatini. Per finire in dolcezza cantucci alle mandorle e torta della nonna alla crema.

My aunt and I took a trip to Italy from the United States and were hoping to take a cooking class while we were here. We found Novella online and decided to give it a try. We were both extremely happy with how friendly, nice, and inviting she was. It was an amazing experience and would highly recommend to anyone wanting to take an authentic cooking class in Italy. Her assistant was also there to help translate and he was very nice as well (I wish I could remember his name).

My class with Maria was excellent! She had beautiful home and had the cooking area all set up for you to begin making pasta. She taught me how to make ravioli with spinach & ricotta filling, pork tenderloin, tomato pomadora and traditional dessert Castagnaccio. Maria is a great hostess, great cook and great teacher!

We had an absolutely lovely morning with our delightful teacher Novella and her friendly sidekick Marco. They were both willing and ready to have a laugh and we learned how to make delicious food in an absolutely beautiful environment, with a view of the Guinigi Tower, with its amazing trees. We had a ball and would highly recommend this experience to anyone who really wants to dive into Lucca and it’s warm, welcoming culture!
