Prediligo piatti semplici, preparati con pochi ingredienti genuini e di stagione, spesso raccolti direttamente dal mio orto e frutteto. Amo valorizzare i sapori autentici della terra, conditi con l’olio extravergine che produciamo in famiglia.La mia è una cucina tipica toscana, ma mi piace anche sperimentare: creo piatti originali che annoto con cura nel mio personale ricettario, nato con il tempo e con tanta passione.

- My wife and I, along with another couple traveling with us, had the absolute pleasure of spending an evening with Alberto and Rosanna in their beautiful home in Lucca—and without question, it was the highlight of our entire trip to Italy. During the week, we visited Pisa, Florence, Lucca, and stayed in Calamecca. Each place was incredible in its own way, but nothing compared to the warmth, joy, and authenticity of this cooking experience. From the moment we walked in, Alberto and Rosanna made us feel as though we were longtime friends being welcomed to their table. Their friendliness and hospitality were unmatched. We shared wonderful conversations about family, travel, Italian and American culture, and of course—great food. Watching them cook together was a joy, and learning from them felt effortless and genuine. We left not only with delicious recipes that we can’t wait to recreate at home, but with memories we will treasure forever. More than just a cooking class, this was an experience filled with connection, laughter, and heart. Alberto and Rosanna now hold a special place in our hearts, and we are so grateful for the time we shared. If you are anywhere near Lucca—or even if you’re not—this is an experience worth planning your trip around.
- We spent 10 days in Italy and our afternoon with Rossana and Alfredo was the absolute highlight of our trip. Rossana was so welcoming and inviting and she just did everything possible to ensure we had a perfect afternoon. She walked us through the preparation of a traditional meal with such kindness and patience that we can't wait to give it a try at home - and actually feel confident in doing so. The recipes were delicious and we enjoyed visiting with her and Alfredo as we enjoyed the meal together. My husband and I highly recommend this experience with Rossana!
- We learned to make pasta/meat sauce, several Italian dips and tiramisu in a friendly and homey environment at Rosanna's. It was delicious and the four of us felt extremely welcome. She was very knowledgeable about how not to cross contaminate my gluten free needs and I appreciated the extra work she had to do...thank you, Rosanna. It was a wonderful evening and I would heartily recommend her class to visitors!!!
- The experience was fantastic. The pasta and sauces we made were great and the hospitality wonderful. I highly recommend her.
- Last night, I had incredible evening at Rosanna’s house. I arrived a little early as I was unsure about traffic. She said that was no problem and we started early. Her home is beautiful and well equipped for groups of all sizes. All of the cooking ingredients and equipment was ready and well organized. I was amazed at her knowledge and skill level. I asked a lot of questions about the ingredients and how they impacted the flavour profile. She answered all of them in a warm manner. I met her family shared what we had cooked together. We had appetizers, truly amazing lasagna and mouth watering tiramisu. A meal at Rosanna’s house is a hidden treasure. Cesarine are lucky to have her on the team. A cooking class with Rosanna is an absolute must to item in Lucca!
