Pinoli (gnocchetti) di Bobbio

A traditional dish from Piacenza, simple yet extraordinarily flavorful

Ingredients

  • 500 g cow's ricotta  
  • 250 g all-purpose flour  
  • 100 g grated Grana Padano cheese  
  • 100 g breadcrumbs  
  • 1 egg  
  • 100 g spinach  
  • Salt to taste  
  • Nutmeg to taste 

Method

  • Start by washing the spinach, then cook it in boiling water for about 7/8 minutes. After that, drain it, squeeze it well, and chop it finely with a mezzaluna or knife.
  • In a large bowl, add the ricotta and spinach, then mix.
  • Add the cheese and breadcrumbs, stir, then add the egg, salt, and nutmeg. Work the mixture until you have a smooth dough.
  • If the dough is too soft, add more flour (but not too much, as it should remain soft).
  • Cut small pieces of dough and stretch them with your hands to form strips about 2 cm wide.
  • Then cut the strips into 1 cm pieces and use the palms of your hands to shape them into small, pin-shaped gnocchetti, making them slightly plump in the center and tapered at the edges.
  • Bring a pot of water to a boil and cook the pinoli for 5 minutes. Then, serve with a basil tomato sauce or any other sauce of your choice.
