We begin with chicken liver crostini, rich and buttery, which prepare the palate for the sacredness of tortellini in broth: little silk-like parcels immersed in a beef and chicken stock. The feast continues with the majestic Cotoletta alla Petroniana, topped with mortadella and melted Parmesan. Every mouthful is a tribute to culinary history. The finale is a chestnut tiramisu with chestnut sauce, a rich, traditional embrace that evokes the scent of the woods. Pignoletto DOCG will accompany the entire dinner, ending with a good Italian coffee from a moka pot.
