My name is Teresa; opening the doors of my home has always been a celebration for my family and a way to meet new people. The kitchen is my kingdom and I am happy to share it and try new things to pass on the traditions of these wonderful places: the Langhe and the Roero.

We’ll start by making a traditional chocolate and amaretto dessert wrapped in a caramel ‘coat’: His Majesty the Bunet! Whilst the dessert is resting, we’ll get our hands dirty making Agnolotti al Plin and Tajarin. I learnt to cook these dishes with my grandmother; they were always on the table on special occasions. Even today, every time I make a ‘plin’ (pinch) to seal the fresh pasta, I feel as though I can see her hands, lovingly reminding me of the secrets to perfect pasta!

On a trip to the Piemonte with friends to experience the countryside, eat amazing food and learn more about the region’s wine, we decided to look into a cooking class. What we found was not a tutorial about making pasta, but an amazing evening with new friends who allowed us a glimpse into the life of a Piedmontese family. Teresa led us past a wall full of family photos upstairs to a beautiful kitchen set up with six cooking stations. Instead of jumping right in, she invited us outside onto her patio for an amazing view of La Morra and served us freshly made bruschetta and bagnet vert with a crisp, refreshing Arneis bottled just down the street. After telling us about the evening to come, we were joyfully greeted by her three beautiful boys home from handball practice. We then set our attention to creating a sumptuous meal of homemade tajarin pasta with veal ragu, agnolotti di plin and a traditional Piemontese dessert called bonet. Although her hen was on strike not laying sufficient eggs for our meal, the rest of the ingredients were local from her father’s farm and a nearby mill. Under Teresa’s friendly watch, we beat eggs, cooked caramel, crushed amaretti biscuits, rolled pasta, Bimby-ed filling and pinched plin until we helped create the best meal we ate during our trip in Italy (sorry Massimo!). We sat and enjoyed our meal outside with Teresa, her husband and two of her lovely friends while drinking Barbera d’Alba and listening to the sounds of the Pocapaglia hillside. We learned so much during our evening with Teresa. Yes, we learned that Semolina prevents pasta dough from drying out while OO flour does the opposite by continuing to “eat” the eggs, but mostly we learned about the land and its people who work it. We learned why the Piemontese work so hard to keep traditions alive enough so that their children don’t leave for the city but prefer to remain home and continue the lifestyle of their Nonno and Nonnas! The evening was just so much fun. Although we don’t know why Teresa would ever leave Piemonte, if one day she does decide to take a vacation, I hope she knocks on our door so we can repay her amazing hospitality!

We spent a delightful afternoon at Teresa's lovely home, cooking the best Italian dishes we've ever made — truly authentic Piedmontese cuisine. Aprons on, we made tajarin with ragu, agnolotti al plin, and finished with a chocolate bunet for dessert, whisking together the cocoa, amaretti cookies, and cream by hand while the kitchen filled with the smell of chocolate. Teresa's kitchen was warm and well-organized, with a bright terrace looking out over the garden, and she was a wonderful teacher and conversationalist, sharing stories along with her recipes. Our family felt completely at home, and we'd love to come back the next time we're in Italy!"

Cooking has always been a great passion of mine. Growing up in a large family, the table was always an important place for sharing and togetherness. Even today, in my home, there is a long table often surrounded by friends with whom I share ideas, emotions, challenges and plenty of laughter over good dishes from the Piedmontese tradition. When I cook, I enter almost a parallel world where everything feels lighter and clearer, and I feel energized again. I don’t have professional culinary qualifications, but I have gained a lot of experience from growing up in a large family where every occasion was a good reason to celebrate together, as well as from a close-knit group of friends who feel like family. I also enjoy dedicating some of my time to local associations by organizing charity dinners to support their activities. In the kitchen I love preparing the dishes I watched my grandmother make: winter afternoons spent making agnolotti al plin, braised meats, roasts, tajarin and ragù — all authentic flavors of the Piedmontese tradition from the Roero area.
