    A journey through the history of the Langhe, via three traditional dishes that you will prepare yourselves under my guidance, drawing on my years of professional experience as a chef. In a medieval village, beneath the castle in my 17th-century home, overlooking the world’s most famous vineyards, you will try your hand at three traditional recipes. You’ll learn about the key ingredients, how to prepare them, measure them out, and serve them with love! We’ll start with anchovies in green sauce. Anchovies? Yes, they’re typical of the Langhe, and I’ll tell you a curious story about this ingredient; then we’ll have square peppers (blanched in Nebbiolo) dipped in Bagna Cauda; and the grand finale will be sausages in Nebbiolo.

    Through Cesarine, we booked a food & wine pairing with a local. The communication was very smooth. The intention was a visit to Moscone winery with a wine tasting and food prepared by Gian Paolo on the spot. Due to a problem in the kitchen, the program was adjusted. First, we visited the winery, where we received a private tour from Denis. With passion, Denis told us about the history of the winery, the wines, the production process, the vineyards, and answered all our questions. After the tour, we followed Denis to Serralunga d’Alba where Gian Paolo welcomed us into his home. He showed us the kitchen with the beautiful view, after which the four of us sat on the terrace. Gian Paolo told us about the importance of balance between wine and food. With each course of delicious dishes with regional products, we tasted wine from Moscone. The dishes were simple and incredibly tasty. The combination was amazing. We talked all evening about all kinds of topics (not just wine and food) and had lovely conversations. It felt like we were sitting at the table with friends. All in all, it was a wonderful evening that we won’t soon forget. Thank you Denis and Gian Paolo.

    Mine is a cuisine that originates from the Piedmontese land. The products are all local and selected (meats, vegetables, cheeses, fresh perfumes) as well as obviously the wines paired with the dishes. I try to be as linear as possible in the preparation even if the Langa cuisine sometimes requires long times and complex procedures. For me it is essential to always recognize the basic elements of a dish. I don't like oddities, the products we have here are enough and more!
