- An aperitif with a welcome cocktail, served with crostini topped with aubergine pâté, aubergine cutlets and aubergine and basil meatballs.
- Aubergine parmigiana made with round purple aubergines, served with tomato sauce, Grana Padano and stringy mozzarella. A classic Italian summer dish, made with locally sourced ingredients.
- Aubergine parmigiana with tomatoes, Le Bufalizie buffalo mozzarella (produced 10 km from home) and Grana Padano from the Pizzighettone dairy.
- Chocolate pudding with chopped hazelnuts, served with shortbread biscuits and homemade medlar-stone grappa.
Set against the backdrop of the ancient city walls, you’ll be welcomed straight into the vegetable garden, where we’ll pick aubergines, cherry tomatoes and basil – ingredients that will be magically transformed into two delicious recipes we’ll prepare together, with our Cesarine aprons tied tight and our hands in the dough: ravioli stuffed with aubergine pâté and served with a sauce featuring stracciatella and burrata – truly delicious; and a mouth-watering aubergine parmigiana, made according to the most classic of recipes, with tomato sauce, local buffalo mozzarella and Grana Padano from the local dairy. All this is preceded by an aperitif with aubergine-based canapés and followed by a light chocolate pudding with homemade grappa. A tribute to Her Majesty the Aubergine. Weather permitting, we’ll be in the garden; otherwise, in the kitchen on the first floor.
