We’ll be using the pumpkin from my vegetable patch in a variety of dishes, from starters to desserts, paired with cheeses from small local dairies. Together, we’ll prepare two first courses featuring the queen of autumn, the pumpkin: gnocchi with a creamy, stringy Gorgonzola sauce, followed by pumpkin flan with Taleggio cream and a Grana Padano wafer, accompanied by the ‘white gold’ of our region – three outstanding examples of local cheese-making of unquestionable quality. To round off the meal, a spoon dessert exclusive to this season, with a pairing that’s well worth trying: a pudding made from the fragrant strawberry grapes of our countryside, served with a slice of Provolone Valpadana PDO and a pumpkin and chocolate chip ciambellone, which is incredibly soft and utterly delicious.
