Preparing a Sicilian Cannolo is not a simple culinary task, but a sensory ritual that intertwines stories, legends and gestures handed down over the centuries. The experience is divided into three fundamental stages: -Creation of the 'Scorza': this consists of the initial preparation of the wafer, which must be crispy and full of bubbles. -Ricotta and pistachio filling: the filling is the soul of the dessert and requires high-quality ingredients. Only sheep's milk ricotta and Bronte DOP pistachios are used. -Filling and decoration: the perfect moment is just before serving. The ends are decorated according to local tradition, in our case with Bronte DOP pistachios.
