Hi, I’m Francesca: an engineer by vocation and a cook by passion. My kitchen is the place where I experiment the most.I start from Tuscan tradition, made of simple and authentic flavors, and enrich it with curiosity and new ideas, without ever losing its essence. I also love taking care of the presentation of dishes, because we eat first with our eyes and then with a smile.Fermented doughs and pastry are my greatest passion: pizza, focaccia, panettone, and sweet breads teach me patience, technique, and the joy of sharing something freshly baked.
