One dough, two souls of Tuscany. Together we’ll prepare handmade schiacciata and explore two variations: the savoury version – thick and crispy – to be topped with cured meats, Tuscan pecorino cheeses and homemade spreads; and the schiacciata with grapes, the harvest dessert, with black grapes encased in the dough and caramelised sugar in the oven. We’ll learn how to knead, roll out and bake the schiacciata in your own oven. Then everyone will create their own combination, following my rule: one cured meat, one cheese, one cream and a fresh element. Finally, we’ll enjoy it whilst it’s still warm, accompanied by a glass of wine from the Pisan Hills.

Hi, I’m Francesca: an engineer by vocation and a cook by passion.
