We will start with the magic of fresh pasta making. You will learn how to mix flour with eggs to create the perfect dough. With our hands in the dough, we will knead, roll out and shape two types of pasta: classic egg pasta and a squid ink variant for a touch of elegance. Between stories of Italian tradition and cooking secrets, we will transform ingredients into authentic culinary masterpieces. After the pasta challenge, we will dive into the world of tiramisu. Aromatic coffee, soggy ladyfingers and delicate mascarpone will combine to create a dessert that will captivate your senses. I will reveal tricks and tips for making the perfect tiramisu, from organizing the cookies to the ideal consistency of the cream.

We had a very nice afternoon with Paola! First we received a very warm welcome by Paola, Massimo and their friend Roberta. After we received instructions through a translator we started making the two pastas, and continued with the teramisu. Then we folded our own tortellini. With every step Paola patiently told us about the very details of the recipes, along the way we learned the Italian words and got to know the Italian way of cooking. After cooking we were served with a 4 course meal with Italian cheese and hams, wines and off course our self made pastas and tiramisu, and close dinner with homemade limoncello. Our evening with Paola lasted for 5 hours, we were welcomed and waived off like family! A lovely experience in a warm Italian home!

What an amazing day !! We were welcomed into the home of Toby the dog, sorry, no Maria and her husband 😉😂. We were patiently guided through the making of pasta and made ravioli and pappardelle. She taught us how to make the filling for the ravioli and also a tomato and basil sauce. The rolling out of the pasta was a humorous part of the afternoon. My wife being slightly better than me and a quizzical, but fun look for Maria 😂 with a helping hand to follow. We also made Tiramisu. All this whilst Toby the dog made sure we were happy and felt welcomed! We were then treated to a sit down meal with wine and meats and cheeses from the region, then the pasta we had “created” followed by the tiramisu. This all helped down by wine and a shot of home made limoncello to finish. Were made to feel comfortable and at home from the moment we arrived. Google translate helped where words and hand signals couldn’t. The highlight of our trip so far. Arrived as strangers, but feel we left as friends. Thank you, until next time…..

What is there to do, see, taste and experience in Viareggio, far from the most famous streets where Carnival is celebrated?  Viareggio is one of the most charming seaside resorts in Italy. It is a city with an Art Nouveau soul that can be felt within its historic buildings and elegant cafés, all reminiscent of Italy in the 1920s. The city is a beautiful 'sandy corner' of Italy, with rows of elegant beach umbrellas, mountains in the background and white quarries seen in the distance.  In the center of the city, in a type of home referred to as "viareggina" (the typical seaside home of Viareggio), we meet Maria Paola. Our Cesarina inherited her passion for cooking and preparing fresh pasta from her father, who himself had learned to cook from the farmers of the Lucca countryside. As a young girl, she would close herself up in the kitchen to create ‘her dishes,’ and today her greatest satisfaction comes from hosting guests, who are at their ease in the welcoming and relaxed atmosphere.  Her culinary skills encompass meat and fish dishes, as well as enogastronomy recipes dating back to ancient Versilian tradition.
