- Buccellato di Lucca with cream and fresh fruits
We will be in an old farmhouse in the hills of Lucca. In the old barn where the kitchen and spice workshop are now located, we will prepare together the legendary Tuscan bruschetta with tomato and oregano or mushrooms or herbs. Then we will knead fresh pasta, and while the dough rests we can enjoy an aperitif and a glass of wine together. Then discovering the history of various pasta shapes we will continue by creating fusilli al ferretto. For beginners we will also discover together the secrets of cooking fresh pasta and its possible toppings. Finally we will try Lucca's delicious dessert: buccellato con crema (an ancient sweet bread with raisins soaked in custard and fresh fruit).

For two years now, I have been researching and experimenting with dishes based on herbs, vegetables, and flowers to showcase and familiarize people with the landscape of Lucca's olive groves through the senses.
