We will be in an old farmhouse in the hills of Lucca. In the old barn where the kitchen and spice workshop are now located, we will prepare together the legendary Tuscan bruschetta with tomato and oregano or mushrooms or herbs. Then we will knead fresh pasta, and while the dough rests we can enjoy an aperitif and a glass of wine together. Then discovering the history of various pasta shapes we will continue by creating fusilli al ferretto. For beginners we will also discover together the secrets of cooking fresh pasta and its possible toppings. Finally we will try Lucca's delicious dessert: buccellato con crema (an ancient sweet bread with raisins soaked in custard and fresh fruit).
Margherita made the cooking class an unforgettable experience on her olive farm in the mountains. She provided 3 great recipes which we had to prepare and gave us a lot of information about the ingredients used and the way how to prepare them. Furthermore, Margherita was very patient and showed us how to improve our handling in making pasta. All in all, it was a pleasure to meet Margherita, her husband and the other two guests in this class and share such a great evening together with a lot of new things learned and very good dinner at the end. We just can say thank you very much for this great evening.

My cuisine is healthy and sustainable, made with natural seasonal products that I harvest and process myself. These are either grown on our farm or sourced from a network of responsible local producers. My preference is to offer vegetarian dishes inspired by the traditional Lucchese Tuscan cuisine, with international influences. For two years now, I have been researching and experimenting with dishes based on herbs, vegetables, and flowers to showcase and familiarize people with the landscape of Lucca's olive groves through the senses.
