We will be at an old Tuscan farm to make homemade egg pasta together. I will explain how to make the pasta filling. Then we will get to work creating herb "ravioli" to smell the scent of the fields with our special sage. Later we will create "Tagliatelle" and "Maltagliati". I will reveal the secrets for the three types of sauce while we will enjoy a small appetizer surrounded by the trees. We are custodians of a project for the enhancement of the Tuscan agricultural landscape. We're waiting for you to share this project together.

Margherita made the cooking class an unforgettable experience on her olive farm in the mountains. She provided 3 great recipes which we had to prepare and gave us a lot of information about the ingredients used and the way how to prepare them. Furthermore, Margherita was very patient and showed us how to improve our handling in making pasta. All in all, it was a pleasure to meet Margherita, her husband and the other two guests in this class and share such a great evening together with a lot of new things learned and very good dinner at the end. We just can say thank you very much for this great evening.

My cuisine is healthy and sustainable, made with natural seasonal products that I harvest and process myself. These are either grown on our farm or sourced from a network of responsible local producers. My preference is to offer vegetarian dishes inspired by the traditional Lucchese Tuscan cuisine, with international influences. For two years now, I have been researching and experimenting with dishes based on herbs, vegetables, and flowers to showcase and familiarize people with the landscape of Lucca's olive groves through the senses.
