We will meet in an ancient farmhouse from the 12th century in the hills of Lucca to discover the secrets of homemade fresh pasta. We will begin with the preparation of Lucca's typical dessert: the cream and fruit buccellato also known as "zuppa Lucchese." Then we will delve into the preparation of egg pasta rolled out by hand with a rolling pin. To be able to capture all the secrets of the goodness of these traditional dishes, I will explain how to prepare the ravioli filling and accompanying sauces. Be careful for each type of pasta there is its own sauce!
Margherita made the cooking class an unforgettable experience on her olive farm in the mountains. She provided 3 great recipes which we had to prepare and gave us a lot of information about the ingredients used and the way how to prepare them. Furthermore, Margherita was very patient and showed us how to improve our handling in making pasta. All in all, it was a pleasure to meet Margherita, her husband and the other two guests in this class and share such a great evening together with a lot of new things learned and very good dinner at the end. We just can say thank you very much for this great evening.

My cuisine is healthy and sustainable, made with natural seasonal products that I harvest and process myself. These are either grown on our farm or sourced from a network of responsible local producers. My preference is to offer vegetarian dishes inspired by the traditional Lucchese Tuscan cuisine, with international influences. For two years now, I have been researching and experimenting with dishes based on herbs, vegetables, and flowers to showcase and familiarize people with the landscape of Lucca's olive groves through the senses.
