Cooking class: learn how to cook traditional & innovative Italian recipes from a local Cesarina

We will meet in an ancient farmhouse from the 12th century in the hills of Lucca to discover the secrets of homemade fresh pasta. We will begin with the preparation of Lucca's typical dessert: the cream and fruit buccellato also known as "zuppa Lucchese." Then we will delve into the preparation of egg pasta rolled out by hand with a rolling pin. To be able to capture all the secrets of the goodness of these traditional dishes, I will explain how to prepare the ravioli filling and accompanying sauces. Be careful for each type of pasta there is its own sauce!

My visit to Margherita's olive farm exceeded my expectations! I am so impressed with the work she has done to begin the long process of rehabilitating the olive farm that was abandoned and unmaintained for so many years! It is remarkable to see an agricultural restoration project that aims not for production only, but for restoring a harmonious balance in nature that leaves room for all to thrive - the plants and flowers, and birds and bees, and herbs and grasses and of course her beautiful olive trees. I hope all visitors will support her adopt-an-olive-tree project! We need more dedicated agricultural enthusiasts who believe in paying attention to nature holistically! Thank you for everything! And PS the lunch on your beautiful farm was delicious.

I cannot say enough about what a great experience this was. Marguerita was a perfect hostess with a small breakfast cake upon arrival and fresh coffee. We then embarked on our cooking journey making pastas, and tiramisu. The villa is beautiful and in the Tuscan HIlls surrounded by fresh herb gardens and Olive trees. She was so patient and kind. An excellent teacher and listener. She never winced once at the mistakes I made! We sampled our dishes and talked all about her childhood growing up cooking traditional Tuscan dishes with her mother and grandmother. She is such an accomplished young woman! Definitely book with her for your Tuscan cooking experience!

Margherita and Pierre went above and beyond to welcome our family into their home for tiramisu and pasta making. They were excellent hosts and made it a fun and interactive experience. We learned about local agriculture and all of the hard work that goes into making pasta and harvesting olives for making olive oil. We loved getting to visit their farm, learn about all of the herbs and local ingredients they cook with, and how they make use of everything that grows in their garden. At the end of the evening, sitting down for a pasta meal and wine, followed by the tiramisu (a family recipe of Margherita‘s) was the perfect end to an evening. We’d recommend to anyone wanting to experience an authentic taste of local Lucca cooking!

Margherita made the cooking class an unforgettable experience on her olive farm in the mountains. She provided 3 great recipes which we had to prepare and gave us a lot of information about the ingredients used and the way how to prepare them. Furthermore, Margherita was very patient and showed us how to improve our handling in making pasta. All in all, it was a pleasure to meet Margherita, her husband and the other two guests in this class and share such a great evening together with a lot of new things learned and very good dinner at the end. We just can say thank you very much for this great evening.

My cuisine is healthy and sustainable, made with natural seasonal products that I harvest and process myself. These are either grown on our farm or sourced from a network of responsible local producers. My preference is to offer vegetarian dishes inspired by the traditional Lucchese Tuscan cuisine, with international influences. For two years now, I have been researching and experimenting with dishes based on herbs, vegetables, and flowers to showcase and familiarize people with the landscape of Lucca's olive groves through the senses.
