I will welcome you to my villa, with large garden and gazebo, where we will taste together the dishes prepared during the class. The recipes will come to life with genuine ingredients: fresh vegetables from the garden, eggs from my happy hens and extra virgin olive oil from our own production. We will begin with a welcome drink, then we will try our hand at preparing tordelli lucchesi, stuffed with meat and seasoned with the family ragout, following the traditional recipe step by step. We will end on a sweet note with the classic tiramisu or, alternatively, the delicious amaretto variant. An experience of sharing, taste and authentic Tuscan cuisine in a cozy family atmosphere.

My wife and I, along with another couple traveling with us, had the absolute pleasure of spending an evening with Alberto and Rosanna in their beautiful home in Lucca—and without question, it was the highlight of our entire trip to Italy. During the week, we visited Pisa, Florence, Lucca, and stayed in Calamecca. Each place was incredible in its own way, but nothing compared to the warmth, joy, and authenticity of this cooking experience. From the moment we walked in, Alberto and Rosanna made us feel as though we were longtime friends being welcomed to their table. Their friendliness and hospitality were unmatched. We shared wonderful conversations about family, travel, Italian and American culture, and of course—great food. Watching them cook together was a joy, and learning from them felt effortless and genuine. We left not only with delicious recipes that we can’t wait to recreate at home, but with memories we will treasure forever. More than just a cooking class, this was an experience filled with connection, laughter, and heart. Alberto and Rosanna now hold a special place in our hearts, and we are so grateful for the time we shared. If you are anywhere near Lucca—or even if you’re not—this is an experience worth planning your trip around.

We learned to make pasta/meat sauce, several Italian dips and tiramisu in a friendly and homey environment at Rosanna's. It was delicious and the four of us felt extremely welcome. She was very knowledgeable about how not to cross contaminate my gluten free needs and I appreciated the extra work she had to do...thank you, Rosanna. It was a wonderful evening and I would heartily recommend her class to visitors!!!

If you have a free half day in Lucca and you love Italian cuisine, I highly recommend taking a cooking class from Rossana. Her class is not only about Italian cooking but also about life in Lucca. The class takes place on her wonderful property amongst olive trees and beautifully manicured plantings. Rosanna is often assisted by her husband Alberto, who is both charming and entertaining. We prepared four dishes during the four hour class, and then sat down to enjoy what we had created. This class was a highlight of our visit to Italy; I highly recommend. The best part, after the class Rosanna provides the recipes in writing for you to enjoy at home. Wonderful experience!

I prefer simple dishes made with just a few wholesome, seasonal ingredients, often harvested directly from my own vegetable garden and orchard. I love to enhance the authentic flavors of the land using extra virgin olive oil that we produce ourselves. My cooking is rooted in traditional Tuscan cuisine, but I also enjoy experimenting: I create original recipes that I carefully jot down in my personal recipe book, built over time with love and passion.
