These are either grown on our farm or sourced from a network of responsible local producers. My preference is to offer vegetarian dishes inspired by the traditional Lucchese Tuscan cuisine, with international influences. For two years now, I have been researching and experimenting with dishes based on herbs, vegetables, and flowers to showcase and familiarize people with the landscape of Lucca's olive groves through the senses.
