Hi from Novella!

I was born in Bologna but my roots are here in Tuscany, including in cuisine.From the Lucca cuisine, I love to prepare tordelli with ragù and various soups, from frantoiana to ribollita to pappa al pomodoro, all seasoned with the excellent oil from our hills.The appetizer is always rustic, with excellent unsalted "sciocco" bread bruschetta and Colonnata lard, Igp Sorana beans, black cabbage, and the inevitable chicken livers. To finish sweetly, almond cantucci and grandmother's cream cake.

: My class with Maria was excellent! She had beautiful home and had the cooking area all set up for you to begin making pasta. She taught me how to make ravioli with spinach & ricotta filling, pork tenderloin, tomato pomadora and traditional dessert Castagnaccio. Maria is a great hostess, great cook and great teacher!

: Exceptional experience! Novella is an amazing host and teacher. Everything was perfect from her home, the set up, her hospitality…you name it! I couldn’t have asked for a better experience!
: We had an absolutely lovely morning with our delightful teacher Novella and her friendly sidekick Marco. They were both willing and ready to have a laugh and we learned how to make delicious food in an absolutely beautiful environment, with a view of the Guinigi Tower, with its amazing trees. We had a ball and would highly recommend this experience to anyone who really wants to dive into Lucca and it’s warm, welcoming culture!
: This class was fun as well as educational! I went by myself and was paired with a lovely family also visiting Lucca. Both the instructor and her assistant were welcoming, engaging, and knew great English. I would do take another course with Novella if I were to visit again!
