In the historic center in a very bright house with a view of Lucca's magnificent towers, we prepare together two different formats of fresh homemade pasta from eggs and flour: ravioli filled with cow ricotta and spinach, flavored with nutmeg, and maltagliati.

With a rolling pin we will roll out the dough for "maltagliati" seasoned with an excellent Tuscan meat sauce or alternatively with a fresh tomato sauce. To conclude, we will prepare a typical and creamy Italian dessert: coffee tiramisu.

My class with Maria was excellent! She had beautiful home and had the cooking area all set up for you to begin making pasta. She taught me how to make ravioli with spinach & ricotta filling, pork tenderloin, tomato pomadora and traditional dessert Castagnaccio. Maria is a great hostess, great cook and great teacher!

They were both willing and ready to have a laugh and we learned how to make delicious food in an absolutely beautiful environment, with a view of the Guinigi Tower, with its amazing trees. I was born in Bologna but my roots are here in Tuscany, including in cuisine. From the Lucca cuisine, I love to prepare tordelli with ragù and various soups, from frantoiana to ribollita to pappa al pomodoro, all seasoned with the excellent oil from our hills. The appetizer is always rustic, with excellent unsalted "sciocco" bread bruschetta and Colonnata lard, Igp Sorana beans, black cabbage, and the inevitable chicken livers. To finish sweetly, almond cantucci and grandmother's cream cake.
