In a bright apartment in the historic center of Lucca, among the most beautiful art cities in Tuscany, a cooking class awaits you to learn the secrets of homemade pasta making with fresh eggs, flour and rolling pin.

Following family recipes, we will roll out the pasta sheet for ravioli filled with ricotta and spinach, topped with butter, sage and Parmesan cheese. Instead, for maltagliati we prepare a flavorful meat sauce that must cook for at least two hours. We finish with a typical Italian dessert, tiramisu: a soft mascarpone cream with cookies, coffee and chocolate chips.

My aunt and I took a trip to Italy from the United States and were hoping to take a cooking class while we were here. We found Novella online and decided to give it a try. We were both extremely happy with how friendly, nice, and inviting she was. It was an amazing experience and would highly recommend to anyone wanting to take an authentic cooking class in Italy. Her assistant was also there to help translate and he was very nice as well (I wish I could remember his name).

My class with Maria was excellent! She had beautiful home and had the cooking area all set up for you to begin making pasta. She taught me how to make ravioli with spinach & ricotta filling, pork tenderloin, tomato pomadora and traditional dessert Castagnaccio. Maria is a great hostess, great cook and great teacher!

I was born in Bologna but my roots are here in Tuscany, including in cuisine. From the Lucca cuisine, I love to prepare tordelli with ragù and various soups, from frantoiana to ribollita to pappa al pomodoro, all seasoned with the excellent oil from our hills. The appetizer is always rustic, with excellent unsalted "sciocco" bread bruschetta and Colonnata lard, Igp Sorana beans, black cabbage, and the inevitable chicken livers. To finish sweetly, almond cantucci and grandmother's cream cake.
