In a bright apartment in the historic center of Lucca, one of Tuscany's most beautiful cities of art, a cooking class awaits you to learn the secrets of homemade pasta made with fresh eggs, flour, and a rolling pin. Following family recipes, we roll out the dough for ravioli stuffed with ricotta and spinach, seasoned with butter, sage, and Parmigiano Reggiano. For the maltagliati, we prepare a tasty meat ragù that must cook for at least two hours. We finish with a typical Italian dessert, tiramisu: a soft mascarpone cream with biscuits, coffee, and chocolate flakes. I look forward to seeing you!

I took the cooking class with a friend and it was an absolute blast! From the moment we walked in, the atmosphere was warm and welcoming. Novella welcomed us into her home like we were old friends! She had so many things ready and prepared for us, even had a helper/assistant,Marco!! We made a delicious tiramisu step-by-step with her. And prepared a spinach and cheese filling for our ravioli. she explained everything perfectly step-by-step. Everything was truly delicious… and was warm and welcoming!! I highly recommend her anytime!!

Wow! What a delightful experience that Novella and Marco provided for us exploring the parts of the town they like to shop at. Absolute gems for fresh produce and other food related products. Then home to Novella's for an authentic cooking experience which was not only fun but also insightful. We learned to make the best pasta. So soft and melt in your mouth. Using one of Novella's recipes she so generously sent us we have just made the best pasta we have ever made at home. (And we have made a lot of pasta from scratch over the years) We highly recommend a cooking class experience with Novella and Marco. We met as strangers and left as friends.

I was born in Bologna but my roots are here in Tuscany, including in cuisine. From the Lucca cuisine, I love to prepare tordelli with ragù and various soups, from frantoiana to ribollita to pappa al pomodoro, all seasoned with the excellent oil from our hills. The appetizer is always rustic, with excellent unsalted "sciocco" bread bruschetta and Colonnata lard, Igp Sorana beans, black cabbage, and the inevitable chicken livers. To finish sweetly, almond cantucci and grandmother's cream cake.
