    In a bright apartment in the historic center of Lucca, among the most beautiful art cities in Tuscany, a cooking class awaits you to learn the secrets of homemade pasta making with fresh eggs, flour and rolling pin.

    Following family recipes, we will roll out the pasta sheet for ravioli filled with ricotta and spinach, topped with butter, sage and Parmesan cheese. Instead, for maltagliati we prepare a flavorful meat sauce that must cook for at least two hours. We finish with a typical Italian dessert, tiramisu: a soft mascarpone cream with cookies, coffee and chocolate chips.

    Wow! What a delightful experience that Novella and Marco provided for us exploring the parts of the town they like to shop at. Absolute gems for fresh produce and other food related products. Then home to Novella's for an authentic cooking experience which was not only fun but also insightful. We learned to make the best pasta. So soft and melt in your mouth. Using one of Novella's recipes she so generously sent us we have just made the best pasta we have ever made at home. (And we have made a lot of pasta from scratch over the years) We highly recommend a cooking class experience with Novella and Marco. We met as strangers and left as friends.

    We spent our last night in Lucca at Novella. She and her assistant helped us create two traditional Italian dishes. The whole family enjoyed the cooking together, even tough we weren't experienced in making pasta. After dinner we ate a delicious Tiramisu and had a good discussion even with multiple translations. We got an invite for an upcoming event. Thank you for the pleasant evening and cultural exchange.

    Cooking with Novella was the highlight of our 2 week Italy trip! Even our teenage boys agree. We felt so comfortable, it was like we were with old friends. The food was fabulous but the best part was learning more about Lucca and Tuscan culture. It was also fun to talk about American culture too.

    I was born in Bologna but my roots are here in Tuscany, including in cuisine. From the Lucca cuisine, I love to prepare tordelli with ragù and various soups, from frantoiana to ribollita to pappa al pomodoro, all seasoned with the excellent oil from our hills. The appetizer is always rustic, with excellent unsalted "sciocco" bread bruschetta and Colonnata lard, Igp Sorana beans, black cabbage, and the inevitable chicken livers. To finish sweetly, almond cantucci and grandmother's cream cake.
