Siena is a city famous for its art, the delicious food, and because its Palio is the most important in Italy. Many are its faces, and the city is unique.

 

A few steps from Piazza del Campo we meet Patrizia. The family of our Cesarina has been from Siena for generations and her passion for cooking was born in her family. In the kitchen, she loves to use creativity and imagination, but always paying attention to the tradition of flavors and tastes of her land. At her table, guests can enjoy dishes with a strong and unmistakable taste, made with genuine products: legumes, vegetables, meats, extra virgin olive oils, ingredients that give life to the most typical recipes of Siena, admiring the Campanone of the Torre del Mangia.

The magical world of pasta  Starting from the techniques of making the basic dough for fresh pasta, together we will put our hands in the dough to make at least 3 different types of filled pasta (Tortelli, Ravioli etc...), decorating the various shapes and also coloring our pasta for a truly wonderful result to the eye and palate. We will also make the filling together, using, depending on the time of year, fresh, quality local raw materials. I will explain the best techniques to reproduce at home the dishes we will make. At the end of each lesson I will give each of my guests written handouts with doses and recipes of the dishes prepared together. The food will be accompanied by good wine coming from the Chianti area, the homeland of wine. At the end of the lesson we will eat together the delicious dishes just prepared. I am waiting for you with open arms at my home for this unforgettable experience.  PS. Please communicate special needs, intolerances and allergies in order to choose the most suitable menu.

What a great pasta! Cover story: pici

What could be more typical, iconic and identifying of the Italian spirit than a good plate of pasta? Pasta has made us unique in the world; it is one of the main elements of Italian cuisine and, consequently, of the collective imagination linked to our natural inclination to think that "what is beautiful is also good". Pasta tells us about our territorial specificities, also according to its formats and imagination, pasta represents the ability to create and amaze. A format, that of Pici or ''Pinci'', of a homemade pasta that tells the story, especially of Siena and its surroundings, it is spaghetti made by hand simply by ''appiciando'' a mixture of flour and water. The verb ''appiciare'' has different meanings from join, to marry, making Pici was once the job of the elderly and children at a wake or during the afternoons was a particular pastime. Pici are the most ancient ''dry pasta'' known in our gastronomy (cit. Academic Giovanni Righi Parenti ). Starting from the preparation of the dough, we realize in this experience various types of recipes of the Sienese tradition making a tour up to Montalcino, place of origin, and we discover together the most appetizing secrets in a journey in the home kitchen that tells history, taste and authenticity.

Our cooking class with Patrizia was the most welcoming, most charming, most delicious and most memorable meal we had in Italy (and that's saying a LOT considering we had many delicious meals!) Patrizia is so knowledgeable about the dishes she helps her students prepare - not only does she take into consideration all dietary restrictions and all of the dishes are recipes that you can recreate once you're home, but she also ensures that you leave her home with a full belly and heart! While we are not fluent in Italian, Patrizia's great niece was a fabulous translator and having dinner with the two of them was such a treat! We really look forward to returning soon and would highly recommend this cooking experience to anyone wanting to learn classic Italian preparation in a non-touristy atmosphere!

We had the most wonderful evening with Patrizia! She was the most personable and wonderful host we could've asked for. She was so knowledgeable about her craft and truly cared about our experience and if we were learning and enjoying ourselves. We made two different types of pastas (sooo delicious) and tiramisu! She also served us wine and aperitif! A very authentic experience and was definitely one of the highlights of our trip! I would love to do another class with her if I came back!

We were so fortunate to have nonna Patrizia for our first ever cooking class. We were 2 adults with a 5 year old and a 1 year old but that was not a barrier at all. She welcomed us warmly into her home and made us feel comfortable right from the start. Her in-depth knowledge and skills of pasta and pastry-making shone through. There was passion and, above all, patience with the way she taught. The clever tricks and techniques we learned will stay with us forever. After everything, we sat down to enjoy the wonderful lunch of stuffed ravioli, and the exquisite torta della nonna that we had prepared. I recommend this to anyone looking for a true and authentic Italian home experience.

Patrizia and her family are very welcoming and wonderful people! The organisation and communication before were excellent and without any problems. Patrizia has a very wide knowledge about the history of Siena, but also about the culture and of course the Tuscan cuisine. We got a small cultural tour of the city and she showed us many hidden places, where locals shop. Afterwards we prepared ravioli together where we learned about her excellent cooking skills and had a hearty meal together with her family. We would definitely recommend Patrizia, not only as a chef but also because of her warm nature! Grazie mille!
