Cooking class: learn how to cook traditional & innovative Italian recipes from a local Cesarina

Welcome to my country home. Our program will include the preparation of three recipes: an appetizer, a fresh pasta dish and a dessert, followed by a delicious three-course menu with the dishes you will have prepared. We will begin our culinary journey with a traditional platter of cold cuts and cheeses, accompanied by homemade jams made from the fruits of my plants. Then, we will try our hand at preparing local lentils with homemade sausages, a dish that captures the essence of our traditions. Next, we will literally put our hands to pasta to create Strengozzi, a fresh pasta typical of holiday Sundays, accompanied by local truffles. To end on a sweet note, we will make tiramisu together.
It was an incredible experience to enjoy a cooking class led by Claudia with her husband Francesco helping her. We were two couples visiting Spoleto for the first time. We enjoyed the event at her home on a family farm on the outskirts of Spoleto. She was thorough, helpful, enjoyable and we all felt like one big family. She is very conscious of quality ingredients and essentially they were all farm to table. Our class menu included lentils with sausage, making the fresh pasta varietal with an amazing truffle sauce and to top it off, we made Tiramisu. Of course we enjoyed our preparation for lunch - and it was delicious! We could have stayed with Claudia and Francesco till dinner time. It was one of those infrequent memorable days! My husband and I did a cooking class with Claudia starting with a walking tour in Spoleto to buy the ingredients- a great approach. Then her husband Francesco picked us up to go to their nearby farm to do the class. They were wonderful hosts, and we felt very welcome in their home. We both enjoyed the class , making pasta and preparing different types of bruschetta, and eating it was even better. It was a great way to finish our stay in Umbria!

My pasta and tiramisù class at Claudia’s home was an absolute highlight of my time in Umbria. Claudia and her husband were incredibly welcoming and generous from the moment we arrived, and they made me feel like an old friend rather than a guest. I was guided step by step through making handmade pasta and a classic tiramisù, with lots of patience, tips, and chances to get hands-on.
