Cooking class: learn how to cook traditional & innovative Italian recipes from a local Cesarina

    Welcome to my country home. Our program will include the preparation of three recipes: an appetizer, a fresh pasta dish and a dessert, followed by a delicious three-course menu with the dishes you will have prepared. We will begin our culinary journey with a traditional platter of cold cuts and cheeses, accompanied by homemade jams made from the fruits of my plants. Then, we will try our hand at preparing local lentils with homemade sausages, a dish that captures the essence of our traditions. Next, we will literally put our hands to pasta to create Strengozzi, a fresh pasta typical of holiday Sundays, accompanied by local truffles. To end on a sweet note, we will make tiramisu together.

    What a fantastic afternoon we had with Claudia! From the very first moment, everything felt personal and welcoming. We started by going grocery shopping together at various local delicatessen shops, where Claudia enthusiastically told us about the products. It was also really fun to choose a matching wine together. After that, we met her husband Francesco, and along the way we were shown a few lovely sights of Spoleto. We then headed to Claudia’s beautiful property, where the cooking workshop took place. The workshop was amazing and so much more than just cooking. It felt like we were briefly part of Italian life. The hospitality of Claudia and Francesco, the delicious dishes, the relaxed atmosphere, and the stunning location made this an experience we will not soon forget. If you are in the Spoleto area, we can highly recommend this cooking workshop. It is a unique opportunity to experience the local culture up close and enjoy an unforgettable afternoon!

But the conversation; the quick connection; and, the genuine friendliness was such a wonderful experience.     My husband and I had a lovely time cooking with Claudia. She guided us very well in the preparation of delicious Umbrian dishes- Claudia’s journey into Umbrian Cuisine through 3 recipes. We prepared lentils with sausages, made our very own pasta with truffle sauce, and an amazing Tiramisu from scratch. All the ingredients were locally sourced and fresh. She welcomed us into her lovely home and laid a beautiful table for us. We recommend Claudia and her husband, Francesco, wholeheartedly.

    We spent a wonderful evening with Claudia and Francesco. Claudia taught us very clearly with a menu of various bruschetta, cheese, capocollo, ravioli, strangozzi and a tiramisu. The food turned out perfectly despite our inexperience. We then had a fantastic dinner learning about life in Umbria and Italy. We couldn’t recommend Claudia’s experience more highly.

    We spent a wonderful morning learning from Claudia and enjoying her and her husband, Francesco's, delightful hospitality. We met opposite our hotel and then went for a wander through Spoleto stopping at various food shops to pick up the freshest ingredients and wine for our lunch. Claudia also took us to the Duomo to admire the frescoes and the hand written letter from St Francis of Assisi. Then it was off to Claudia and Francesco's home in the countryside for pasta making lesson in her well- equipped and laid out kitchen. Claudia's teaching is clear and straightforward and the strangozzi and various bruschettas were soon made. Then we sat down for lunch with Claudia and Francesco to devour the fruits of our labours and to learn more about the food, history and culture of Umbria. It was a super enjoyable introduction to our holiday and an experience not to be missed. Thanks so much Claudia

From the moment I got married, I continued the family tradition re-proposing the typical dishes that my father used to prepare for us and my guests are always happy when they are invited for lunch or dinner."
