Surprise dessert
The red potato of Colfiorito is perfect for soft and tasty gnocchi. We start with an aperitif of local produce, an authentic taste of Umbria, before getting down to business to prepare gnocchi together with a seasonal sauce. A genuine culinary experience, immersed in nature. And to conclude, a sweet surprise made by me. I look forward to seeing you in my home in the countryside, surrounded by peace, to experience moments of taste and relaxation.
We had a wonderful day with Claudia. She took us into Spoleto for shopping and a little sightseeing and then we had a fabulous lunch with her husband Francesco in their beautiful home. The food was wonderful. All the ingredients were fresh, some right from their garden! She generously shared culinary tips and recipes which we will definitely use at home. We talked about our families and our hopes and dreams for our children. I feel like we made good friends. It was truly a highlight of our trip to Italy.

It was an incredible experience to enjoy a cooking class led by Claudia with her husband Francesco helping her. We were two couples visiting Spoleto for the first time. We enjoyed the event at her home on a family farm on the outskirts of Spoleto. She was thorough, helpful, enjoyable and we all felt like one big family. She is very conscious of quality ingredients and essentially they were all farm to table. Our class menu included lentils with sausage, making the fresh pasta varietal with an amazing truffle sauce and to top it off, we made Tiramisu. Of course we enjoyed our preparation for lunch - and it was delicious! We could have stayed with Claudia and Francesco till dinner time. It was one of those infrequent memorable days! Thank you Claudia for making it possible. A presto!

My husband and I did a cooking class with Claudia starting with a walking tour in Spoleto to buy the ingredients- a great approach. Then her husband Francesco picked us up to go to their nearby farm to do the class. They were wonderful hosts, and we felt very welcome in their home. We both enjoyed the class , making pasta and preparing different types of bruschetta, and eating it was even better. It was a great way to finish our stay in Umbria!

Claudia and Francesco were superb hosts. Well organized, the freshest of local ingredients, and great language skills. We learned a great deal about Umbrian cuisine and hospitality. AND a most delicious lunch to share. We heartily recommend.
