We’ll start with a selection of fresh and mature cheeses, accompanied by delicious local cured meats and vegetables from the garden. We’ll sample Strengozzi, a typical fresh pasta from Spoleto. The main course is a delicious free-range chicken alla cacciatora served with a seasonal side dish, which brings out the authentic flavours of our land. To finish, we’ll serve Crescionda Spoletina. A tribute to my family, my homeland and local produce. During the culinary tour, you’ll have the chance to savour fresh produce from the garden, including extra virgin olive oil, jams and preserves, which represent a tradition rooted in farming and family-run livestock rearing. I look forward to welcoming you to my country home to share these culinary treasures.
My husband and I had a lovely time cooking with Claudia. She guided us very well in the preparation of delicious Umbrian dishes- Claudia’s journey into Umbrian Cuisine through 3 recipes. We prepared lentils with sausages, made our very own pasta with truffle sauce, and an amazing Tiramisu from scratch. All the ingredients were locally sourced and fresh. She welcomed us into her lovely home and laid a beautiful table for us. We recommend Claudia and her husband, Francesco, wholeheartedly.

From shopping for fresh ingredients in Spoleto, to enjoying a charming walking tour that included an ancient Roman amphitheater, to being welcomed into their beautiful home, every moment was thoughtfully planned and filled with warmth. This was, without question, one of the absolute highlights of our trip to Umbria.

We spent a wonderful evening with Claudia and Francesco. Claudia taught us very clearly with a menu of various bruschetta, cheese, capocollo, ravioli, strangozzi and a tiramisu. The food turned out perfectly despite our inexperience. We then had a fantastic dinner learning about life in Umbria and Italy. We couldn’t recommend Claudia’s experience more highly.

We spent a wonderful morning learning from Claudia and enjoying her and her husband, Francesco's, delightful hospitality. We met opposite our hotel and then went for a wander through Spoleto stopping at various food shops to pick up the freshest ingredients and wine for our lunch. Claudia also took us to the Duomo to admire the frescoes and the hand written letter from St Francis of Assisi. Then it was off to Claudia and Francesco's home in the countryside for pasta making lesson in her well- equipped and laid out kitchen. Claudia's teaching is clear and straightforward and the strangozzi and various bruschettas were soon made. Then we sat down for lunch with Claudia and Francesco to devour the fruits of our labours and to learn more about the food, history and culture of Umbria. It was a super enjoyable introduction to our holiday and an experience not to be missed. Thanks so much Claudia

We had a wonderful day with Claudia. She took us into Spoleto for shopping and a little sightseeing and then we had a fabulous lunch with her husband Francesco in their beautiful home. The food was wonderful. All the ingredients were fresh, some right from their garden! She generously shared culinary tips and recipes which we will definitely use at home. We talked about our families and our hopes and dreams for our children. I feel like we made good friends. It was truly a highlight of our trip to Italy.
