Welcome to my kitchen for a taste of authentic Umbria! In this course, we will learn the art of 'poor' pasta: Stringozzi. I will show you how, starting with just water and flour, you can create a pasta with a unique texture, typical of Spoleto.

We will knead the dough together, learn how to roll it out and cut it strictly by hand. We will also prepare the classic Spoleto-style sauce, a simple sauce that enhances the freshness of the pasta. The experience will end at the table, enjoying the fruits of our labour in an atmosphere of true home hospitality, accompanied by a good glass of local wine.

My mission is to celebrate the culinary heritage of my family and my region, elevating it to a gourmet level that is both accessible and authentic, while staying true to tradition. For me, there is no better way to honor Italian cuisine, a UNESCO World Heritage, than with dishes that tell the story of our history, our land, and our passion.
