I look forward to welcoming you to Spoleto in my apartment in a historic building dating back to 1920. With its high ceilings and historic charm, my kitchen will be the setting for our Masterclass. We will get our hands dirty preparing authentic Pasta alla Norcina, where I will reveal the secret of authentic creaminess without cream, blending Umbrian technique with my Roman roots and using only local delicacies such as Norcia sausage. The menu continues with my tender and flavorful Saltimbocca alla Romana and a traditional dessert.

After cooking, we will sit down in the historic dining room to enjoy the dishes we have prepared together, toasting with a glass of local Grechetto wine. An authentic experience that combines technique, history, and the unforgettable flavors of central Italy.

I am a professional chef with deep roots in the culinary traditions of Lazio and Umbria. I grew up in the kitchens of the restaurant world: the granddaughter of restaurateurs, I started handling ingredients and cooking at the age of six. Cooking is not just what I do—it’s in my DNA. After years of hands-on experience and technical training, I decided to open the doors of my home in Spoleto to offer an intimate and exclusive Chef’s Table experience. My mission is to celebrate the culinary heritage of my family and my region, elevating it to a gourmet level that is both accessible and authentic, while staying true to tradition. For me, there is no better way to honor Italian cuisine, a UNESCO World Heritage, than with dishes that tell the story of our history, our land, and our passion.
