Welcome to my kitchen in Otranto, in the heart of Salento, where I’ll welcome you to share an experience dedicated to the authentic flavours of Apulian tradition. We’ll get stuck in and discover the secrets of home-cooked recipes, prepared with simple, wholesome ingredients that are deeply rooted in the local area. We’ll start with friselline topped with fresh tomatoes and basil, and bruschetta with stracciatella and smoked aubergine – a blend of Mediterranean aromas and Salento flavours. We’ll then move on to making orecchiette and sagne together, two types of fresh pasta typical of Puglia, whilst learning techniques and traditions passed down through the generations.
We’ll finish with meat bombette, one of the most beloved dishes of Apulian cuisine.

I am Carmen De Benedetto, I am 60 years old and I live in Otranto. Cooking and hospitality are a great passion of mine. My project includes preparing traditional dishes while explaining the ingredients used, providing guidance on food preservation to ensure consumer safety, and sharing every meal to create memories, tell stories, and enjoy smiles together around the table.
