The variety of fresh vegetables I use in cooking come from suppliers with organic gardens. I cook them simply with Istrian extra-virgin olive oil and aromatic herbs, preferably with quick and healthy cooking methods. The rolls have a reference to Greek and Slavic cuisine, both well-present in the Trieste tradition. The orzotto is a Friulian recipe, while the gateau recipe is my own reworking of Southern Italian recipes, without the use of thickeners and cream, making it lighter. The dishes will be served in an elegant setting, with a classic mise en place, and in an environment where antique furniture and precious paintings make the experience of this dinner/lunch pleasant and appealing.
