The most iconic Tuscan dish is ''gnudi,'' ricotta and spinach gnocchi named for their resemblance to the filling of ravioli, but without pasta, seasoned in a variety of ways: with hazelnut butter and sage, to savor their delicacy as much as possible; gnudi with black cabbage (in season); and then moving on to stuffed gnocchi (the filling is your choice depending on your guest's needs, from sausage, salami, cheese, and vegetables).A cooking class full of ideas and suggestions, for a dish that both young and old enjoy!
