Together we will make the crispy panelle, tasty chickpea flour fritters, and two iconic first courses: the rich and flavorful Pasta alla Norma and the irresistible tagliatelle with meat sauce. To end on a sweet note, we will prepare the classic tiramisu, creamy and enveloping, and a small Sicilian cannoli, with its fragrant wafer filled with delicate ricotta cream.     Cooking is a perfect blend of creativity and tradition. The dishes I have lovingly prepared for years, now family favorites, are rooted in the rich Sicilian culinary tradition. Among my favorites are baked anelletti, homemade pasta like maccheroni, and unique, flavorful dishes such as couscous, sfincione, calzoni, arancine, and panelle. I also cherish the sweetness of traditional desserts: cassatelle filled with chickpea or ricotta cream, the iconic cannoli, buccellati, and the refined almond parfait. For my guests, I enjoy offering an authentic experience, starting with sfincione and ending with a delicious cannolo, all accompanied by a fine glass of Marsala or Zibibbo, to enhance the flavors and celebrate the soul of Sicily.
