    Piadina is one of the most iconic, traditional and therefore representative foods of Romagna, it changes depending on the areas where it is prepared : tall or thin, soft or crumbly, with salty or sweet ingredients; what is certain is that everyone likes it, both adults and children. The piadina can be a street food but also an accompaniment dish to an important lunch or dinner that you cannot give up. With this course we will go over the preparation and tasting of the various types of piadina that can be found in Romagna, from the tallest and softest produced mainly in the Ravenna and Forlì-Cesena areas to the thinner and crumblier ones from Rimini and Riccione, accompanied by cold cuts, cheeses, vegetables and sweet ingredients such as caramelized figs, savour, and nutella.

    I am originally from Cervia, but I moved to Rimini at the age of 25, and I have been living in Santarcangelo di Romagna for over 15 years, just a few kilometers away from Rimini and the sea. Santarcangelo is a lively inland town, full of commercial and dining activities, with a historic center particularly appreciated for its architecture and scenic beauty. I decided to dedicate myself full time to my lifelong passion: traditional and popular Romagna cuisine. Today, I am a professional sfoglino (pasta maker) for some famous local restaurants, and I enjoy experimenting with the many and varied local ingredients to create the best flavors. I love sharing my passion and my continuous search for excellent local raw materials with my friends and everyone who wants to experience the surprising sensations of Romagna cuisine. For this reason, I decided to open the doors of my home to the guests of Cesarine, confirming the hospitality of our territory, Romagna!
