In the cooking class you are about to take, I will guide you through the preparation of Cappelletti, a pasta from the culinary tradition intended for the holiday season. Each family cook jealously preserves her own recipe for the filling, making each family's tradition unique. My recipe comes directly from my great-grandmother, a refined woman and skilled cook, according to what they tell me. In the culinary tradition of Romagna, Cappelletti are usually served in broth. However, in this course you will have the opportunity to taste them not only in broth, but also dry, accompanied by a delicious ragout prepared according to authentic traditions. One of the most beautiful local culinary experiences I have ever had. The place is wonderful—a garden of Eden, to give you an idea. Patrizia and her mother are sweet, affectionate, and great professionals. Local appetizers with piadina perfectly brushed with oil, then cheeses, squacquerone, local prosciutto and salami, roasted potatoes with rosemary and thyme, and gratin tomatoes—a grade of 10 with honors—and then, and then, and then, Patrizia is waiting for you. Don't miss the strozzapreti, I almost forgot!
