Experience authentic Sicilian cuisine by making sfincione, Palermo's typical tall, soft focaccia.

Together we will make this traditional delicacy with tomato, onion, sausage, chunks of fresh cheese and a crispy coating of breadcrumbs, oregano and grated cheese. The smell of freshly baked sfincione will win you over! To finish, we will enjoy a Sicilian cannolo freshly filled with the freshest ricotta cheese. A cooking class among flavors, fragrances and tradition: I am waiting for you for an unforgettable journey into true Sicilian cuisine!

A Soul-Nourishing Cooking Experience in Cesarna — Food, Heart, and Healing We had the absolute honor of taking a cooking class with Francesca and her husband in Cesarna—and it was truly out of this world. From the moment we arrived, we were not just welcomed into their home, but into their hearts and souls. Their warmth, generosity, and kindness radiated through every gesture, every dish, and every smile. What they offer is far more than a cooking class—it’s an experience of connection, culture, and profound soul nourishment. We first started in their beautiful garden with a stunning table filled with fresh, seasonal aperitifs—fruits from their land, foraged herbs, beautifully crafted drinks, and baked goods still warm from the oven. This generous welcome instantly set the tone: abundant, joyful, and deeply intentional. The cooking itself was a spiritual experience. Under their patient and loving guidance, we made fresh pasta and Tiramisu from scratch. They made us feel completely seen, understood, and included—especially our 4-year-old daughter, who was embraced like one of their own. They played with her, cooked with her, and made her feel so loved that she did not want to leave. As we cooked, we felt something deeper: a reverence for food as a sacred act of love and nourishment. Their energy was calm, grounding, and full of joy—a reminder that food isn’t just about sustenance, but about connection, community, and care. The way they infused intention into every ingredient and every step of the process was deeply inspiring. It reminded us how healing food can be—how cooking with love, patience, and presence can touch places that words cannot. We prepared and shared three kinds of fresh pasta—each representing a different region (Bologna, Sicily, and Venice)—with incredible sauces like a rich, comforting ragu and a soul-warming Pasta alla Norma with perfectly fried eggplant. Everything was fresh, simple, and overflowing with flavor. We ended with a tiramisu that was delicate, creamy, and full of love. It was so delicious, we still can't stop thinking about it. This experience moved us on many levels. The kindness and care they offered created a ripple effect that stayed with us long after we left. It reminded us that food is not just about what’s on the plate—it’s about the energy behind it, the love we pour into it, and the people we share it with. This was one of the most meaningful and nourishing things we have ever done while traveling. If you are in Italy, do not miss this. Come hungry—for food, for warmth, for connection. They will fill you with all three.

Cooking is a perfect blend of creativity and tradition. The dishes I have lovingly prepared for years, now family favorites, are rooted in the rich Sicilian culinary tradition. Among my favorites are baked anelletti, homemade pasta like maccheroni, and unique, flavorful dishes such as couscous, sfincione, calzoni, arancine, and panelle. I also cherish the sweetness of traditional desserts: cassatelle filled with chickpea or ricotta cream, the iconic cannoli, buccellati, and the refined almond parfait. For my guests, I enjoy offering an authentic experience, starting with sfincione and ending with a delicious cannolo, all accompanied by a fine glass of Marsala or Zibibbo, to enhance the flavors and celebrate the soul of Sicily.
