You can immerse yourself in the autumnal flavors of a menu prepared with local products and full of intense tastes that reflect the atmosphere of the lands near the Po River, located between Emilia and lower Mantua.
At the table you can enjoy:
- Pumpkin flan served with a balsamic vinegar reduction and Parmigiano Reggiano cream, or erbazzone, a classic of the region.
- Risotto with puntello, topped with shelled salamella and accompanied by ribs or pork chop. As an alternative, a creamy risotto with pumpkin and shelled Mantuan salamella.
- Sbrisolona to be enjoyed with an accompaniment of your choice.
In autumn, the "lower" towns come alive with local festivals. The squares fill with fragrances We are waiting for you to experience the authenticity of these traditions together.
Our cooking class with Chiara exceeded our expectations! We absolutely loved the entire experience and would highly recommend her class. Everything went perfect. As a host, Chiara made us feel comfortable and welcome as soon as we arrived and she did a great job of communicating with us before the class to ensure everything would go smoothly.
As a teacher, Chiara was patient, fun, and incredibly helpful. She kept us well-informed through the whole cooking process and helped guide the way as we, complete amateurs, learned from a pro!
The quality of the ingredients was top notch which made for absolutely delicious final products!!!
Dinner wasn’t just great food, as we thoroughly enjoyed the company. Eating felt more like hanging out with friends rather than a classroom. This was a great benefit as it made us feel like we experienced an authentic piece of Italian culture.

Our Cesarina Chiara lives in Reggiolo, a small town on the border between Emilia and Lombardy, land of the Po and the Gonzagas. "I am a young girl who grew up on 'tortelli and cappelletti'. Nonna Luisa taught me to work fresh pasta, to prepare simple dishes, but rich in tradition. I am waiting for you to savor those flavors that for me are home, authenticity and sharing."
