Busiate and cannoli in an authentic cooking class in Menfi

We’ll start with ‘cacio all’argentiera’, a historic dish from the Palermo tradition, created from humble ingredients yet full of character. We’ll continue by making fresh, handmade busiate using re-milled wheat flour and traditional ‘busi’, the ancient tools used for working wool. We will then dress the pasta with a sauce of tomato, swordfish and aubergine, the perfect symbol of the meeting between sea and land.
We will finish on a sweet note by preparing the iconic Sicilian cannolo, with a crispy shell and ricotta cream enriched with chocolate or chopped pistachios.
