    The appetizer will be presented in a cozy corner with sofas, located in front of a wall screen, where a short and fascinating video about the ancient archaeological ruins of Selinunte will be shown. The fresh seasonal vegetables for our caponata will be harvested directly from our family garden and served as an appetizer, accompanied by a fine wine produced in Sicily. Then we will roll out tagliolini (or stuffed sacchottini) by hand, using fresh eggs from our chicken coop and stone-ground Tumminia flour from ancient grains. Unique and aromatic first courses that will be paired with fresh fish from Selinunte. Nocellara del Belice extra virgin olive oil, harvested from our plants, will be used to fry the shortcrust pastry of typical Sicilian cannoli.

    We are visiting Sicily from Ireland on our honeymoon. We've spent 10 incredible days on the island but without a doubt our evening with Ita and Francesco is the highlight. We were warmly welcomed into their home and straight down to the pasta making lesson. We have very little Italian but it all still worked. Francesco brought us around the garden also, showing us all the fresh ingredients that we would use - and the chickens (not included). The food was out of this world, fresh and deliciously presented. We managed to converse via Google translate, learning that Ita is an architect by trade and Francesco, a criminal defence attorney. A wonderful evening that we would have no hesitation recommending to any visitor to Sicilly. We are already planning our return to explore Castelverano and Selinunte

    We had an excellent cooking class with Ita and her husband. The food was superb, we learned a lot about how to make pasta and tiramisu and then ate a wonderful dinner with our hosts. The chef is a 'Slow Food’ advocate and as a result, everything was very healthy. My only caveat was the language barrier but we easily made it work with Google live translate. For us, it made the whole experience even more authentic. Highly recommend.

    Our evening with Ita and her family was absolutely fantastic. We were greeted into their home as if we were family, and their warmth and hospitality were amazing. We had the most delicious authentic Sicilian meals, all made with fresh products (mainly from their own garden), and learned how to make our own pasta. We would highly recommend the cooking class with Ita to everyone who is looking for a unique and warming experience.

    Our day with Cesarina Ita was one of the highlights of our trip. Not only did our family of four learn to cook exception Sicilian food, we gained a better understanding of our Sicilian heritage, and we were treated to the warmth and hospitality of Ita, her husband Franco, and Ita’s friend and translator, Carol. Our class was held in Ita’s beautiful home, a few miles north of Marinella di Selinunte. Because my grandmother was born in Marinella, Ita customized our menu at our request, and taught us to cook local dishes that were part of our family’s heritage including busiate pasta, ravioli, caponata, zucchini and red onions, and even cassatedde, a dessert that was my grandmother’s specialty. The lunch we helped to cook was the best food we ate during our entire trip. But, for us, this experience was more than a wonderful cooking class. It was a chance to learn more about our Sicilian roots, and we are so grateful to Ita for the effort she made on our behalf so this could happen.
