Marsala fish couscous was born where the sea meets semolina, in a land accustomed to trade and travel. Brought to Sicily by Arab influence, couscous becomes something unique here: no longer meat, but fish, what the sea provides every day. It is a dish of ports, of nets hung out to dry, of boats returning slowly. Cùscus is not a noisy celebration, but a domestic ritual. The semolina must be kneaded by hand, with water, salt, and oil, worked between the fingers until it becomes small, irregular grains. There is no rush: time is an ingredient. There are no written recipes; couscous is "felt." The kitchen fills with the smell of the warm sea, spices, and freshly melted tomatoes. The couscous steams in the couscous pot, a sound that smells of memories and stories.
