Your experience

    Tajarin are prepared according to the traditional recipe with 30 egg yolks for every pound of flour. I will teach you how to mix the ingredients, roll out the pasta sheet with a rolling pin and make Tajarin, tagliatelle or pappardelle.

    Comodino sauce, a traditional Piedmontese sauce, involves the use of offal from barnyard animals, but can be substituted with a braised or other sauce. Comodino sauce, from the Piedmontese dialect "cumuda'," is so called because it "sits" on top of the pasta once it is cooked. It was King Victor Emmanuel II's favorite sauce. We will complete the meal with a second course or appetizer from the Piedmontese tradition and accompany coffee with traditional dry pastries.

    I love cooking the traditional dishes that made me love my grandmother: mixed boiled meat with green sauce, agnolotti, veal with tuna sauce, Russian salad, the protagonists of Sunday lunch. Also local dishes such as bagna cauda, ​​rabatoni and then polenta with braised meat and cheeses. I also love pastry and I prepare jams that I use in desserts. The house specialty is risotto, with vegetables, strawberries and mushrooms. My husband is a sommelier so the correct wine subscription makes for a complete meal. We also have a wood-burning oven in which to cook bread, pizza and porridge and which we also use to grill and cook the leg or suckling pig in the oven.
