In this course, you’ll learn to recreate a classic peasant-style menu from the Amerino area, surrounded by lush greenery. We’ll make fregnacce – a fritter stuffed with wild herbs – and fresh egg pasta with a seasonal sauce made from whatever the vegetable garden or woodland has to offer. Finally, we’ll make red wine biscuits, perfect for enjoying with a glass of wine.

In recent years, I've developed a passion for classical cooking and ancient methods: slow cooking, open fire, wood-fired ovens, handmade doughs, and natural leavening. I love simple recipes where each ingredient plays a clear role and the flavors are bold, authentic, and easy to recognize.
