In this course, we’ll fire up the wood-fired oven and, starting with the pizza dough, we’ll work together to create a complete culinary journey, from starters to dessert.
We’ll start with fried montanare topped with tomato and Parmesan, before moving on to prepare a variety of classic and creative pizzas, using seasonal ingredients and whatever’s available from the vegetable patch and the market.
We’ll round off the experience by discovering the secrets of a delicious mascarpone cream, to be enjoyed with fresh fruit and white pizza, for a simple yet indulgent finale.

In recent years, I've developed a passion for classical cooking and ancient methods: slow cooking, open fire, wood-fired ovens, handmade doughs, and natural leavening. I love simple recipes where each ingredient plays a clear role and the flavors are bold, authentic, and easy to recognize.
