This season, the vegetable garden once again offers precious ingredients that can be transformed into simple but flavorful dishes. During the cooking class, you will learn how to prepare them in different ways, from lighter, vegan versions to versions enriched with other flavors. Depending on availability, we will prepare wild chicory with mashed fava beans, fennel au gratin, or traditional cardoons. These are traditional family recipes that I saw my parents prepare: healthy, genuine, and nutritious dishes that reflect the simple cuisine that nourished entire generations in the most difficult times.
