Il mercato di Sant’ambrogio è il più antico mercato alimentare di Firenze e quello in cui i locali continuano a fare shopping.
È un mercato autentico e interessante in cui il re Charles ha trascorso un'intera mattinata quando era ancora un principe. Pieno di verdure locali, carne e pesce è un ottimo posto per iniziare la nostra classe acquistando alcuni ingredienti freschi ed esplorando le bancarelle più interessanti.
Dopo il mercato, cammineremo a casa mia e inizieremo la lezione di cucina. Prepareremo, a secondo della stagione, fiori fritti o una bruschetta con ingredienti stagionali, ravioli fatti in casa e un dessert.

- An Unforgettable Culinary Experience with Chef Carlo (and Nila!) 🇮🇹🍝👨🍳🐕🦺 We had the absolute pleasure of being welcomed into Chef Carlo’s home for a private cooking class, and it was nothing short of amazing. From the moment we arrived, Chef Carlo made us feel like family — warm, genuine, and incredibly passionate about his craft. The experience was more than just a cooking class; it was a journey into the heart of Italian cuisine and culture. Chef Carlo’s knowledge and love for food shone through every step, from selecting fresh ingredients to teaching us traditional techniques. It was eye-opening to see how much soul goes into every dish — something you can’t learn from a recipe book. Cooking alongside him in his kitchen was both fun and deeply inspiring. We didn’t just learn how to make delicious pastas and dessert — we learned to feel the food, to understand the rhythm and story behind each meal. And of course, a special shoutout to Nila, the sweetest little sous-chef and host, who made the entire experience even more heartwarming with her adorable presence. This was not just a class, but a memory we’ll cherish forever. Thank you, Chef Carlo (and Nila!), for sharing your home, your knowledge, and your heart with us. Highly recommended for anyone seeking an authentic and unforgettable culinary adventure. We’ll surely be back one day…with more of our loved ones as well! Love all the way from Singapore! 🇸🇬❤️

- We had a great cooking class with Carlo! We learned a lot about the pasta making and got some good tips for making the best pasta at home. The pasta we’ve made was very delicious en very tasteful. Thank you for your hospitality Carlo!
- Carlo’s class was great, beyond expectations!! We cooked two pastas (ravioli and spaghetti alla chitarra cacio e pepe) and tiramisù. Carlo is very patient and explained step by step! And during the process he gave precious tips that you usually don’t find in the books and that really make a difference! He also gives information on how to cook a healthier pasta, which was very nice to know about! I would absolutely recommend Carlo’s class to anyone willing to know how to make great pasta!! Don’t even think twice, that’s the class you are looking for!! :)
- I attended Carlo’s pasta making class in order to learn to make pasta from scratch and perhaps a new sauce or 2. I learned very quickly that pasta is an art and an easy one at that. Gnocchi was also included, also made from scratch. Carlo is very passionate about food, and he shares many tips and tricks during the class. This was my second class with Carlo. They are very hands on so be prepared to get your hands sticky! The classes are very small, and the meal we shared was amazing. I shared a previous class with a wonderful family also visiting Florence! I would highly recommend Carlo’s classes; they are very professional and informative. He also shares the recipes when class is finished.

Da anni mi dedico anche alla ricerca di una cucina non solo buona, ma anche attenta alla salute: dolci a basso contenuto di colesterolo e zucchero, pasta fatta in casa con farine macinate a pietra da piccoli mulini. In molti casi infatti è possibile cucinare buoni piatti a chilometro zero senza dimenticare la salute. Questa però non deve essere una scusa per creare dei piatti mediocri: se non sono buoni è inutile che siano sani!"
