During the cooking class, we’ll prepare three traditional specialities: Torta di Bietole, a dish that symbolises local cuisine; fresh stuffed pasta made to family recipes; and the ever-present flower-shaped Ligurian Canestrelli. You’ll learn how to knead the dough, roll out the pastry and make a filling with local herbs and ricotta, using the family’s old mortar to prepare a traditional walnut sauce.
