During this cooking class you will learn how to prepare 3 recipes: an appetizer typical of my area, Chard Pie, a first course of fresh pasta, and Canestrelli, sweets typical of Liguria.Under my guidance you will learn how to make the dough, roll out the puff pastry and prepare a fresh pasta following my family's recipes, with a filling of local herbs and ricotta cheese. We will use the old family mortar to make a traditional sauce with walnuts, garlic and cream.Dulcis in fundo we will make the typical flower-shaped Canestrelli cookies with simple ingredients such as butter flour sugar and egg. All that remains is to try putting your hands in the dough and savor the authenticity and simplicity of Ligurian cuisine.

The location dates back to the 1700s, owned by an old family of Genoese nobles.It is a short walk from the largest historic center in Europe, that of the Palazzi dei Rolli in the Via Aurea Garibaldi, where time has stopped in the 16th century. The Doge with the Genoese nobles inhabited these palaces full of Baroque paintings, Persian carpets and objects from ancient China with which the Seafaring Republic of Genoa held its first sailing charters; now home to magnificent museums.The dishes we will make together: "Calamaritto", a squid sandwich, Potato gnocchi with Pesto and a traditional dessert.

I will welcome guests to the dining room with a welcome aperitif accompanied by cuculli (fluffy pancakes) and panissa (chickpea flour pancakes). After the aperitif, there will be a demonstration for the preparation of Recco-type cheese focaccia: how the dough is made, the use of prescinseua (typical Genoese cheese), and baking.This will be followed by the first course with homemade ravioli made with meat, as a recipe handed down from my great-grandmother, and topped with typical Genoese tuccu.The second course is also an old Genoese specialty: stracotto, accompanied by delicious roasted potatoes flavored with herbs.We end the menu with a cake made of shortbread and lemon cream garnished with pine nuts, all washed down with typical local wine.

A cooking class to learn the preparation of two delicious and very popular dishes: ravioli and tiramisu. You will start by preparing the filling for the ravioli and the puff pastry. Next we will move on to the making of tiramisu. You will make the ladyfingers with your own hands, prepare the egg and mascarpone cream and go on to compose your tiramisu and then enjoy it at the end of the meal. At the end of the cooking class we will set the table, a mise en place with delicate tones and decorated with seasonal flowers to make everything prettier. I will be happy to welcome you to my home and work alongside you. When you arrive you will find all the materials and ingredients you need to make the dishes.
