The crispy farinata made from chickpea flour is an ancient Genoese culinary tradition, found in historic shops and old Genoa's fry houses. Learning to make it at home and serving it to guests means mastering the art of using humble yet quality ingredients to create a unique dish that combines taste and simplicity.

Portofino lasagna features fresh pasta, smothered in DOP Genoese pesto, and baked: it's a traditional dish that rivals haute cuisine. Finally, the Rose Cake, which won me first prize in a best cake competition: sharing this dessert with you truly means leaving a part of my personal cooking experience and tradition.

Today we did the small group pasta and tiramisu class in Genoa. Our hosts were Tiziana and Roberto and they graciously invited us into their home. There were six of us which included my two sisters and their husbands along with my husband and myself. We made the tiramisu first so that it could refrigerate. While making the tiramisu, there was focaccia bread and some outstanding pesto she had made. Then, we each made ball of dough for the pasta. We were making lasagna with an pesto sauce and herb and pesto ravioli with a walnut sauce. Since the dough needed to rest for thirty minutes, Tiziana had a delicious spread of several meats, cheese, pickles and bread on two trays for us to enjoy. Next we made the lasagna and ravioli from our pasta dough. We learned how to make both and were each able to participate in the process. Tiziana and Roberto were gracious hosts and we enjoyed getting to know both of them while we cooked and ate the amazing food we had prepared. It was a wonderful time. We loved it so much. Thank you to you both!!

Tiziana and Roberto were amazing! I booked a class for myself and my two teenagers and it was definitely the highlight of the trip so far. It is hard to know looking online if something is going to be personal or super touristy, and I can happily say that Tiziana and Roberto welcomed us into their home and we immediately felt like visiting family instead of strangers. The food was fantastic and we got to sample other dishes while waiting for ours to finish. A beautiful home, a beautiful family, and the best pesto I have ever eaten!

What a great experience! I wish I could leave more then 5 stars!!! Tiziana and Roberto were extremely accommodating and so fun to cook with! Tiziana showed us the ins and outs to creating local Italian cuisine! The final product was delicious! And the Tiramisu was the best we’ve ever had! We are so excited to put our new skills into practice back home in Australia! We Highly recommend Tiziana’s cooking class for any travellers if they want a relaxed and fun activity to do in Genoa! Should you find yourself in Genoa, please enjoy an amazine culinary experience with hosts, Tiziana and Roberto. My son, daughter and I shared the evening learning to make tiramisu, ravioli pasta and sailor's biscuit. Tiziana and Roberto were warm and welcoming, and made us feel at home in theirs. Not only did we enjoy the food we prepared, but were also treated to delicious wine, coffee, and focaccia bread, as well as Tiziana's signature pesto sauce, which will certainly have a great run at the Pesto World Championships this year (she has our vote!). Even with a very slight language barrier, the conversation flowed and new friendships were formed (food is a universal language, after all). We cannot recommend this experience enough to those who enjoy delicious food, great company, and fine Italian culture. Thank you Tiziana and Roberto!
